We are seeing a growing trend in the restaurant industry. Both operators and equipment manufacturers are planning for – and in some cases, already implementing – the smart internet-connected kitchen. The next generation of mission-critical equipment such as ovens, fryers, hot holding cabinets, dish machines, and refrigeration units are generating data on their use and performance, and this data is being pushed to the internet. What kind of data do these systems generate? What are the challenges associated with managing this data? How can facilities maintenance professionals benefit from this newfound visibility, and how might facilities teams incorporate this new capability into their day-to-day operations?
