John Wilson
The son of a brewer and grandson of a brewer and bootlegger, John has been brewing for more than 20 years. After spending 10 years abroad and experimenting with traditional fermentation techniques, he joined the Fermentation Science program at Colorado State University (CSU). John is currently a graduate student in CSU’s Department of Food Science, where he researches traditional fermentation techniques and how to integrate them into modern brewing systems. John also researches the fermentation of vegetables, legumes, meats, sour tonics, grains, and vinegars.
