the Consorzio Prosciutto di Parma was established in 1963, on the initiative of 23 producers with  the objectives of safeguarding the genuine product and its tradition. The consortium is now made up of 156 producers. Parma Ham I san all-natural ham made with just four ingredients – Italian pigs bred in one of ten northern and central Italian regions, salt, air and time. Additives such ass colorings and nitrates are prohibited by the strict rules of the Consorzio
