Sakai Forged Knives





Sakai Forged Knives are a traditional Japanese kitchen knife which almost all Washoku chefs in Japan are using. The most distinctive feature of Sakai knives is their extreme sharpness. Blades are hand-forged by a black smith and sharpened by a sharpening specialist one by one. More than 200 types of knives have developed over 300 years to meet the needs of chefs from Osaka, Kyoto and Edo (Tokyo) and are still dominating in the professional world.

Sakai, a port city located in southern Osaka, is famous for producing the world's finest cutlery but it's not the only thing that it's best at. "Everything comes from Sakai" is a phrase explaining Sakai's manufacture-oriented aspect. Along with Kyoto, Sakai is one of the oldest cities in Japan and has been a supplier for the nation all through the ages. This autumn, Sakai City is exhibiting at Food Japan 2016 with a knife craftsman and Wa-shoku chef who knows everything about knife technique and Japanese cuisine. Also 4 knife makers and a food trading company in Sakai are with us.
