We started La Quercia with the goal of making uniquely delicious cured meats from humanely raised American pork. Though our appreciation of fine cured meats was sparked by several years in Parma, Italy, it was the bounty of our home region that inspired us to start curing meats in our Des Moines basement. We were captivated from day one! A decade later, we still salt, turn, and trim each piece by hand at our aging rooms in Norwalk, Iowa. We use pork from family farms in the Midwest that raise their animals humanely without antibiotics.We make prosciutto, pancetta, coppa, speck, lomo, guanciale, lardo, salami, and 'nduja. We offer all of our meats by the whole piece, as well as a line of pre-packed items for retail.
