Ever since the cheese dairy was created in 1907, three generations of passionate cheesemakers have followed in turn, passing on the values of tradition and expertise drawn from their Jura heritage. Today, Jean-Charles Arnaud – the heir to this historic heritage – is the man upholding the maturation secrets handed down from his ancestors like a treasure trove.









The stunning aromatic wealth of this Comté is in particular due to its maturation conditions: extensive grazing at an average altitude of 1,000 to 3,000 feet (in the Jura mountain range near to Switzerland), ensuring lush grass and very diverse floral including hundreds of species with exceptional aromatic potential.
