The Gabriel Coulet family has been producing and maturing Roquefort since 1872 when the old-old-old Grand Father of Emmanuel Laur decided to change his wine cellar into a Roquefort maturing cellar as he has discovered a beautiful “Fleurine” in his cave. After 130 years, the Dairy is still run by the same family as today the 5th generation arrives.
