Peter Reinhart has been searching for the perfect pizza his entire life. He writes about this search in his books and even has a TV show dedicated to it called "Pizza Quest," and his pizza classes around the country are hot ticket items.

For Peter, it all begins with the crust, which he believes is the real differentiator between a good pizza and a great pizza. It is the one characteristic that can elevate a pizza to make it memorable. A great crust is what can make a pizza so memorable that you obsess about it, can't wait to go back and get it again, to tell all your friends and your family that they simply have to go there. With a great crust you hardly need any toppings, the toppings are just a bonus. On the other hand, the world's greatest ingredients, served on top of an average pizza crust, will never be more than interesting, but will never be great or memorable.

Peter has his own well documented methods for how to make such a memorable crust but his quest for the perfect pizza has led him around the world to find out what other great pizzaioli know and do, that allow them to separate themselves from the pack. He will share his insights with us in this entertaining and informative keynote address.
